Souvlaki

How to make it
- Cut the pork into even 3 cm cubes so they cook through at the same rate.
- Whisk the olive oil, lemon juice, crushed garlic, oregano, paprika, salt, and pepper into a marinade, add the pork, and toss to coat, then cover and refrigerate for at least 2 hours or overnight.
- Thread the marinated cubes onto skewers, leaving small gaps between pieces, and let them sit at room temperature for 15 minutes while the grill heats to high.
- Grill the skewers over high heat for 10 to 12 minutes, turning every few minutes, until charred on the edges and cooked through to an internal temperature of at least 71Β°C (160Β°F).
- Meanwhile warm the pitas briefly on the grill until soft and lightly toasted.
- Rest the skewers for 3 minutes, then slide the pork off into the warm pitas with sliced red onion and a final squeeze of lemon.
