How to make it

  1. In a bowl whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, mint flakes, rosemary, garlic powder, salt and pepper to make the marinade.
  2. Add the chicken pieces and turn to coat thoroughly, then cover and refrigerate for at least 2 hours or up to overnight.
  3. Remove the chicken from the refrigerator about 30 minutes before cooking and preheat a grill to medium heat, oiling the grates well.
  4. Grill the chicken skin-side down first for 6 to 8 minutes until the skin is golden and well marked, then turn.
  5. Continue grilling, turning occasionally and moving pieces away from any flare-ups, for a total of 30 to 40 minutes depending on size.
  6. Cook until the juices run clear and a thermometer inserted into the thickest part reads 74C (165F).
  7. Rest the chicken loosely covered with foil for 5 to 10 minutes, then serve with extra lemon wedges.
