How to make it

  1. Season the meat with salt and a little of the onion, then place in a pot with half the water and bring to a simmer, skimming off any foam that rises.
  2. Add the garlic, ginger, chile and blended tomatoes along with the stock cube, cover and cook for 20 minutes so the meat begins to tenderize and the flavors build.
  3. Loosen the peanut butter with a cup of warm broth from the pot, whisking until smooth and pourable so it will not form clumps in the soup.
  4. Stir the thinned peanut butter and the tomato paste into the pot, then add the remaining water and the rest of the chopped onion.
  5. Simmer gently uncovered for 30 to 40 minutes, stirring often so the peanut butter does not catch on the bottom, until the oil floats to the surface and the soup is thick and rich.
  6. Continue cooking until the meat is fully tender and reaches a safe internal temperature, at least 74C (165F) for chicken or 71C (160F) for beef, then taste and adjust the salt.
  7. Skim off any excess oil if you prefer, then serve the soup hot with rice balls, fufu or plain rice.
