How to make it

  1. Divide the minced beef into four equal portions and shape each gently into a patty about 2 cm thick and slightly wider than your buns, pressing a small dimple into the centre of each so they cook flat.
  2. Season both sides of the patties generously with the salt, pepper and garlic powder just before cooking.
  3. Heat the vegetable oil in a heavy frying pan or grill over medium-high heat until very hot.
  4. Cook the patties for about 4 to 5 minutes on the first side without pressing them, then flip once and cook a further 4 to 5 minutes, until well browned, the juices run clear and no pink remains; for safety the centre should reach at least 71 C (160 F) on an instant-read thermometer.
  5. Lay a slice of cheddar on each patty for the final minute of cooking and cover loosely so the cheese melts, then transfer the patties to a plate to rest briefly.
  6. Lightly toast the cut sides of the hamburger buns in the same pan while you slice the tomato and onion and rinse the lettuce.
  7. Build each burger on a toasted bun base with lettuce, a cheeseburger patty, tomato and onion, then add condiments of your choice and close with the bun top.
