How to make it

  1. Rinse the rice in a fine strainer under cold running water until the water runs mostly clear, then drain it well to remove excess surface starch.
  2. Melt 2 tablespoons of the butter in a heavy-bottomed pot over medium heat, then add the finely chopped onion and cook for 4 to 5 minutes until softened and translucent.
  3. Stir in the minced garlic and cook for about 1 minute more, just until fragrant, taking care not to let it brown.
  4. Add the drained rice and stir for 1 to 2 minutes so the grains are coated in the butter and lightly toasted.
  5. Pour in the chicken broth, add the bay leaf, salt and black pepper, and bring everything to a brisk boil.
  6. Reduce the heat to low, cover the pot tightly, and let the rice simmer undisturbed for 18 to 20 minutes, until the liquid is absorbed and the grains are tender.
  7. Remove from the heat, dot the remaining 2 tablespoons of butter over the top, cover again and rest for 5 minutes, then discard the bay leaf and fluff with a fork before serving.
