Liberian Butter Rice

How to make it
- Rinse the rice in a fine strainer under cold running water until the water runs mostly clear, then drain it well to remove excess surface starch.
- Melt 2 tablespoons of the butter in a heavy-bottomed pot over medium heat, then add the finely chopped onion and cook for 4 to 5 minutes until softened and translucent.
- Stir in the minced garlic and cook for about 1 minute more, just until fragrant, taking care not to let it brown.
- Add the drained rice and stir for 1 to 2 minutes so the grains are coated in the butter and lightly toasted.
- Pour in the chicken broth, add the bay leaf, salt and black pepper, and bring everything to a brisk boil.
- Reduce the heat to low, cover the pot tightly, and let the rice simmer undisturbed for 18 to 20 minutes, until the liquid is absorbed and the grains are tender.
- Remove from the heat, dot the remaining 2 tablespoons of butter over the top, cover again and rest for 5 minutes, then discard the bay leaf and fluff with a fork before serving.
