How to make it
- Pat the flank steak dry, then whisk together the dijon mustard, olive oil, salt, freshly-ground black pepper, cayenne pepper, crushed dried rosemary and mesquite smoke powder into a paste.
- Rub the paste evenly over both sides of the steak, then let it marinate at room temperature for 30 minutes, or cover and refrigerate for up to 8 hours and return to room temperature before cooking.
- Preheat a grill or heavy cast-iron pan over high heat until very hot, which is essential for a good sear on this lean cut.
- Sear the steak for about 4 to 5 minutes per side, turning once, until a deep crust forms and an instant-read thermometer reads 54 to 57 C for medium-rare.
- Transfer the steak to a board and tent loosely with foil, letting it rest for at least 8 to 10 minutes so the juices redistribute.
- Identify the direction of the muscle grain, then slice the steak very thinly against the grain on a slight angle to keep each piece tender, and serve.
