How to make it
- Preheat the oven to 180 C (350 F) and grease a baking dish with a little of the butter.
- Bring a large pot of salted water to a boil, cook the macaroni until just tender (about 8 minutes), then drain and toss with the butter so it does not stick.
- Finely grate the onion and carrot, or chop them very small, so they soften evenly through the pie.
- In a bowl whisk the eggs with the evaporated milk, salt, and white pepper until smooth, then stir in the grated onion, carrot, and about two-thirds of the cheese.
- Combine the warm drained macaroni with the egg-and-cheese mixture, stirring well so the custard coats every piece, then tip it into the prepared dish and level the top.
- Scatter the remaining cheese over the surface and bake for 35 to 40 minutes, until the custard is fully set in the center and the top is golden and lightly crisp.
- Let the pie rest for 10 minutes so it firms up before cutting into squares and serving.
