How to make it

  1. Cut the chicken fillets into bite-size strips and season lightly with salt, then mince the garlic and ginger and slice the onion.
  2. Peel the mango, cut the flesh from the stone, and dice half of it, then blend or mash the other half into a smooth puree.
  3. Heat the oil in a large skillet or wok over medium-high heat and sear the chicken in batches for about 4 to 5 minutes until golden on all sides, then set aside.
  4. Lower the heat to medium, add the onion, garlic, and ginger to the same pan, and cook for 3 minutes until softened and fragrant, then stir in the curry powder and toast it for 30 seconds.
  5. Pour in the sherry to deglaze, scraping up the browned bits, then stir in the mango puree and coconut milk and let it come to a simmer.
  6. Return the chicken to the pan, fold in the diced mango, and simmer for 6 to 8 minutes until the sauce thickens and the chicken is cooked through to at least 74 C (165 F).
  7. Taste and adjust the salt, then serve over rice scattered with the grated coconut or ground peanuts.
