Mango Chicken

How to make it
- Cut the chicken fillets into bite-size strips and season lightly with salt, then mince the garlic and ginger and slice the onion.
- Peel the mango, cut the flesh from the stone, and dice half of it, then blend or mash the other half into a smooth puree.
- Heat the oil in a large skillet or wok over medium-high heat and sear the chicken in batches for about 4 to 5 minutes until golden on all sides, then set aside.
- Lower the heat to medium, add the onion, garlic, and ginger to the same pan, and cook for 3 minutes until softened and fragrant, then stir in the curry powder and toast it for 30 seconds.
- Pour in the sherry to deglaze, scraping up the browned bits, then stir in the mango puree and coconut milk and let it come to a simmer.
- Return the chicken to the pan, fold in the diced mango, and simmer for 6 to 8 minutes until the sauce thickens and the chicken is cooked through to at least 74 C (165 F).
- Taste and adjust the salt, then serve over rice scattered with the grated coconut or ground peanuts.
