Mazurek Cake

How to make it
- In a bowl, rub the cold cubed butter into the flour, sugar and pinch of salt with your fingertips until the mixture resembles coarse crumbs.
- Add the egg yolks and milk or cream, then quickly bring the dough together into a smooth ball without overworking it, wrap it and chill for at least 30 minutes.
- Preheat the oven to 180°C (350°F) and line a baking sheet or shallow tart tin with parchment paper.
- Roll or press the chilled dough out to an even rectangle about 1 cm thick, building up a slightly raised border around the edges, then prick the base all over with a fork.
- Bake for 20 to 25 minutes until firm and pale golden, then remove and let it cool completely on a rack.
- Make the glaze by gently melting the chopped chocolate with the butter and heavy cream over low heat, stirring until smooth and glossy.
- Pour the chocolate over the cooled base and spread it evenly, then scatter the dried fruit and nuts on top and let the topping set before cutting into squares.
