How to make it
- Preheat the oven to 190C and crush the garlic croutons into coarse crumbs, then soak them in the milk for 5 minutes until softened.
- In a large bowl, combine the ground sirloin, ground chuck, finely grated onion, egg, soaked crumbs, 2 tablespoons of the ketchup, the Worcestershire sauce, red pepper flakes, salt, and black pepper, and mix gently with your hands until just combined without overworking it.
- Pack the mixture into a loaf shape on a lined baking sheet or into a loaf pan, then spread the remaining ketchup over the top as a glaze.
- Bake the meatloaf for 50 to 60 minutes until it is firm and reaches an internal temperature of at least 71C in the center with no pink remaining, then let it rest for 10 minutes before slicing.
- Meanwhile, peel and chop the potatoes, place them in cold salted water, bring to a boil, and simmer for about 20 minutes until fork-tender.
- Drain the potatoes well, then mash them with the butter and a splash of warm milk, seasoning with salt and pepper to taste.
- Slice the rested meatloaf and serve with the mashed potatoes and any pan juices spooned over the top.
