How to make it

  1. Preheat the oven to 350 F (175 C) and lightly grease a loaf pan or line a baking sheet with parchment.
  2. Tear the whole-wheat bread into small pieces, place in a large bowl, pour over the milk, and let soak for about 5 minutes until softened into a paste.
  3. Finely chop the onion and parsley, then add them to the bowl along with the beaten eggs, parmesan, dijon mustard, worcestershire sauce, salt, and black pepper.
  4. Add the ground beef and mix gently with your hands just until everything is combined, being careful not to overwork the meat or the loaf will turn dense.
  5. Transfer the mixture to the loaf pan and shape it into an even mound, then spread the ketchup over the top as a glaze.
  6. Bake for 55 to 65 minutes, until the loaf is firm and the internal temperature reaches 160 F in the center.
  7. Let the meatloaf rest for 10 minutes so the juices settle, then slice and serve.
