How to make it

  1. Put the parsley, shallots, garlic, olive oil, dijon mustard, italian herb blend and lemon juice into a blender or food processor and blitz to a loose green sauce, then season it with salt and pepper.
  2. Place the chicken breasts in a dish, pour over about half of the green sauce, turn to coat and leave to marinate for at least 20 minutes at room temperature or up to a few hours in the fridge; reserve the remaining sauce separately for serving and do not let it touch the raw chicken.
  3. Heat a tablespoon of oil in an ovenproof skillet over medium-high heat and preheat the oven to 200 C.
  4. Sear the marinated chicken for 3 minutes per side until lightly golden, then transfer the skillet to the oven.
  5. Roast for 12 to 15 minutes until the chicken is cooked through and a thermometer inserted into the thickest part reads at least 74 C (165 F).
  6. Rest the chicken for 5 minutes so the juices redistribute, then slice it thickly.
  7. Spoon the reserved fresh green sauce over the sliced chicken and serve.
