How to make it

  1. Grate or pull the cheese into shreds and finely chop the onion, herbs and pickled jalapeno so the fillings are ready to scatter quickly.
  2. Warm a dry or lightly oiled comal or skillet over medium heat until a drop of water sizzles on contact, then briefly heat each corn tortilla until soft and pliable.
  3. Lay a warm tortilla in the pan, cover half its surface with cheese and a little onion, herbs and jalapeno, then fold the bare half over to enclose the filling.
  4. Cook for 2 to 3 minutes until the underside is golden and spotty, then flip and cook the other side for another 2 minutes until the cheese is fully melted and stringy.
  5. Press gently with a spatula so the quesadilla seals, then transfer to a board and let it rest for a minute before cutting.
  6. Slice each quesadilla in half and serve hot, repeating with the remaining tortillas and filling so everyone eats them straight off the pan.
