How to make it
- Whisk the flour, yeast, sugar and salt in a large bowl, then pour in the warm water and 2 tablespoons of the olive oil and bring everything together into a shaggy dough.
- Knead the dough on a lightly floured surface for 8 to 10 minutes until smooth and elastic, then transfer to an oiled bowl, cover and leave somewhere warm for about 1 hour until doubled in size.
- Stir the za'atar with the topping olive oil in a small bowl to make a loose, spreadable paste, adding a touch more oil if it looks dry.
- Knock back the dough, divide into 4 equal pieces and roll each into a round disc about 1 cm thick, then place on baking trays lined with parchment.
- Spread the za'atar paste generously over each round, leaving a thin border, dimple the surface with your fingertips and scatter over the sesame seeds.
- Bake in an oven preheated to 230 C for 8 to 12 minutes until the bases are set and the edges are pale golden but still soft, then serve warm.
