How to make it
- In a large bowl, combine the ground beef, cooked brown rice, finely chopped onion, chopped cilantro, one minced garlic clove, cumin, salt, and black pepper, mixing gently with your hands until just combined.
- Roll the mixture into about 16 evenly sized meatballs, roughly 1 1/2 inches across, and place them on a tray.
- Heat the olive oil in a large skillet over medium heat, then add the meatballs in a single layer, turning occasionally to brown them on all sides, about 8 minutes.
- Reduce the heat to medium-low, cover the skillet, and cook for another 8 to 10 minutes until the meatballs are cooked through and reach an internal temperature of 160 F (71 C).
- While the meatballs cook, stir together the yogurt, remaining minced garlic clove, crushed dried mint, and a pinch of salt to make a cool sauce.
- Transfer the cooked meatballs to a serving plate and let them rest for a couple of minutes.
- Spoon the minted yogurt sauce over the meatballs or serve it alongside for dipping, garnishing with extra cilantro if desired.
