How to make it

  1. Preheat the oven to 190 C and lightly grease a medium baking dish.
  2. Heat the oil in a large pan and fry the finely chopped onion over medium heat until soft and translucent, then add the minced meat and cook, breaking it up, until browned and no longer pink.
  3. Stir in the grated tomatoes, tomato paste, paprika, half the chopped parsley, salt and pepper, and simmer for 5 minutes until the mixture is moist but not watery.
  4. Peel the potatoes and cut them into 1.5 cm cubes, then fold them through the meat so they are evenly distributed.
  5. Tip everything into the baking dish, spread level, pour in enough hot water to come about two-thirds up the mixture, cover with foil, and bake for 40 minutes until the potatoes are tender.
  6. Meanwhile, whisk together the yogurt, eggs and flour with a little salt to make a smooth topping.
  7. Remove the foil, pour the yogurt topping evenly over the surface, and return the dish to the oven uncovered for 20 to 25 minutes until the custard is set and golden and any meat juices read at least 75 C.
  8. Rest the moussaka for 10 minutes, scatter with the remaining parsley, and serve warm.
