How to make it

  1. Rinse the dried beans, then place them in a large pot with plenty of water and boil for about 45 to 60 minutes until they begin to soften, topping up with hot water as needed.
  2. Add the sweet corn kernels to the softening beans and continue to simmer for 15 to 20 minutes until both are tender.
  3. Stir in the chopped onion, ground crayfish, crumbled stock cubes and the whole scotch bonnet pepper, then season with salt to taste.
  4. Pour in the palm oil and stir well so it melts evenly into the porridge, giving it a rich colour and flavour.
  5. Reduce the heat and let everything simmer gently for another 10 to 15 minutes, stirring occasionally, until the mixture thickens to a soft porridge consistency.
  6. Mash a few spoonfuls of the beans against the side of the pot to help thicken the dish if you prefer it creamier.
  7. Taste and adjust the salt, then remove the whole pepper if you want it milder. Serve hot on its own or with fried plantain.
