Nigerian Fried Fish

How to make it
- Rinse the fish well, pat dry, and cut 2 or 3 diagonal slashes into the thickest part of each side so the seasoning penetrates and it cooks evenly.
- In a bowl combine the ginger garlic paste, crumbled stock cube, half the ground chile, the nutmeg, salt, a squeeze of citrus juice, and the water to make a wet rub, then coat the fish inside, outside, and into the slashes and marinate for at least 30 minutes in the fridge.
- Mix the plain flour with the remaining ground chile and a pinch of salt on a plate, then dredge each marinated fish, pressing gently so the coating clings, and shake off the excess.
- Heat the oil in a deep frying pan to about 175 C, or until a pinch of flour sizzles steadily on contact.
- Lower the fish in carefully, one or two at a time to avoid crowding, and fry for 5 to 7 minutes per side until deep golden and crisp and the flesh is opaque and flakes easily at the bone, reaching at least 63 C internally.
- Lift out with a slotted spatula, drain on paper towels, and serve hot with lemon or lime wedges.
