How to make it

  1. Rinse the fish well, pat dry, and cut 2 or 3 diagonal slashes into the thickest part of each side so the seasoning penetrates and it cooks evenly.
  2. In a bowl combine the ginger garlic paste, crumbled stock cube, half the ground chile, the nutmeg, salt, a squeeze of citrus juice, and the water to make a wet rub, then coat the fish inside, outside, and into the slashes and marinate for at least 30 minutes in the fridge.
  3. Mix the plain flour with the remaining ground chile and a pinch of salt on a plate, then dredge each marinated fish, pressing gently so the coating clings, and shake off the excess.
  4. Heat the oil in a deep frying pan to about 175 C, or until a pinch of flour sizzles steadily on contact.
  5. Lower the fish in carefully, one or two at a time to avoid crowding, and fry for 5 to 7 minutes per side until deep golden and crisp and the flesh is opaque and flakes easily at the bone, reaching at least 63 C internally.
  6. Lift out with a slotted spatula, drain on paper towels, and serve hot with lemon or lime wedges.
