How to make it

  1. Season the mackerel steaks with a little salt and one crumbled stock cube, then steam or simmer them in a small amount of water for about 10 minutes until firm and cooked through to an internal temperature of 63Β°C; lift out, reserve the fish stock, and remove any bones once cool enough to handle.
  2. Heat the palm oil in a wide pot over medium heat for 1 to 2 minutes until it loosens and turns clear, taking care not to let it smoke or overheat.
  3. Add the chopped onion and fry for 3 to 4 minutes until softened and fragrant, then stir in the blended tomatoes and habanero.
  4. Simmer the tomato base uncovered for 8 to 10 minutes, stirring often, until the raw smell disappears and the oil begins to float to the surface.
  5. Stir in the ground crayfish, the remaining stock cube, and a splash of the reserved fish stock, then season with salt to taste and cook for another 2 minutes.
  6. Gently fold in the cooked mackerel pieces, keeping the chunks intact, and let them warm through in the sauce for 2 minutes.
  7. Add the shredded pumpkin leaves, stir to coat, and cook uncovered for just 3 to 5 minutes so the greens wilt but stay vibrant; taste, adjust salt, and serve hot with rice, yam, or boiled plantain.
