How to make it
- Rinse the rice under cold running water until the water runs clear, then bring a large pot of salted water to a boil, add the rice, and parboil for about 10 minutes until just tender; drain and set aside.
- Roughly chop the tomatoes, red bell pepper, chile peppers, and one of the onions, then blend with the garlic and ginger to a smooth puree.
- Finely dice the remaining onion. Heat the groundnut oil in a wide pot over medium heat and fry the diced onion until soft and golden, about 5 minutes.
- Stir in the tomato paste and cook for 2 minutes, then pour in the blended pepper mixture and simmer over medium heat for 12 to 15 minutes, stirring often, until the raw smell disappears and the oil rises to the surface.
- Crumble in the bouillon cube and add the curry powder, thyme, and salt to taste; pour in the water and bring the stew to a gentle simmer.
- Fold the drained rice into the stew, reduce the heat to low, cover tightly, and let it steam for 18 to 20 minutes until the rice is fully cooked and has absorbed the liquid.
- Remove from the heat, fluff gently with a fork, and let it rest covered for 5 minutes before serving warm.
