How to make it
- Finely chop the onion and garlic, then warm the olive oil in a large heavy pot over medium heat and soften the onion for about 5 minutes without colouring.
- Add the garlic and the whole rosemary sprig, cook for 1 minute until fragrant, then pour in the white wine and let it bubble and reduce by half.
- Stir in the chopped tomatoes and cook for 8 to 10 minutes until they break down into a loose sauce.
- Add the drained borlotti beans and the stock, season lightly, and simmer gently for about 20 minutes; remove the rosemary sprig and mash a ladleful of beans against the pot to thicken the soup.
- Bring the soup to a steady simmer, stir in the pasta, and cook for 9 to 11 minutes until the pasta is al dente, adding a splash of hot water if it gets too thick.
- Taste and adjust the salt and black pepper, then let the soup rest off the heat for 5 minutes so it thickens to a hearty consistency.
- Ladle into bowls, drizzle with a little extra olive oil, and finish with grated parmesan.
