How to make it
- Preheat the oven to 425 F and fit one pie crust into a 9-inch pie plate, pressing it gently against the bottom and sides.
- In a large bowl, toss the sliced pears with the lemon juice and water, then add the granulated sugar, brown sugar, flour, cornstarch, and cinnamon and stir until the fruit is evenly coated.
- Spoon the pear filling into the lined crust, mounding it slightly in the center, and dot the top with the pieces of butter.
- Lay the second crust over the filling, trim the overhang to about half an inch, then fold the edges under and crimp to seal; cut a few vents in the top to let steam escape.
- Brush the top crust with the beaten egg wash for a glossy golden finish.
- Bake at 425 F for 20 minutes, then reduce the oven to 375 F and bake for another 30 to 35 minutes until the crust is deep golden and the filling bubbles through the vents.
- If the edges brown too quickly, cover them loosely with foil, then cool the pie on a rack for at least 2 hours so the filling sets before slicing.
