How to make it

  1. Roast the red peppers under a hot grill until the skins blacken, then steam them in a covered bowl for 10 minutes, peel and discard the skins and seeds.
  2. Put the peeled peppers, chillies, garlic, onion, the juice of the lemon, vinegar, olive oil, paprika, thyme, black pepper and salt into a blender and blitz to a smooth peri-peri marinade.
  3. Slash the chicken pieces a few times through the thickest parts, place in a bowl, pour over two-thirds of the marinade and coat well, reserving the rest for basting.
  4. Cover and marinate in the refrigerator for at least 2 hours, or overnight for the best flavour.
  5. Arrange the chicken on a lined tray and roast in an oven preheated to 200 C for about 35 to 40 minutes, basting with the reserved marinade halfway through.
  6. For a charred finish, transfer the chicken to a hot grill or griddle pan for the final few minutes, turning once.
  7. Check that the chicken is cooked through to an internal temperature of 75 C and the juices run clear, then rest for 5 minutes and serve with the remaining sauce.
