Peri-Peri Chicken

How to make it
- Roast the red peppers under a hot grill until the skins blacken, then steam them in a covered bowl for 10 minutes, peel and discard the skins and seeds.
- Put the peeled peppers, chillies, garlic, onion, the juice of the lemon, vinegar, olive oil, paprika, thyme, black pepper and salt into a blender and blitz to a smooth peri-peri marinade.
- Slash the chicken pieces a few times through the thickest parts, place in a bowl, pour over two-thirds of the marinade and coat well, reserving the rest for basting.
- Cover and marinate in the refrigerator for at least 2 hours, or overnight for the best flavour.
- Arrange the chicken on a lined tray and roast in an oven preheated to 200 C for about 35 to 40 minutes, basting with the reserved marinade halfway through.
- For a charred finish, transfer the chicken to a hot grill or griddle pan for the final few minutes, turning once.
- Check that the chicken is cooked through to an internal temperature of 75 C and the juices run clear, then rest for 5 minutes and serve with the remaining sauce.
