How to make it

  1. Preheat the oven to 200 C (400 F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the cake flour, baking powder, salt, and caster sugar.
  3. Cut the cold butter into small cubes and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs.
  4. In a separate jug, beat the egg with the heavy cream, then pour most of it into the flour mixture and stir gently until a soft dough just comes together, reserving a little for glazing.
  5. Turn the dough onto a lightly floured surface, pat it out to about 2.5 cm thick, and cut out rounds with a floured cutter, gathering scraps to cut more.
  6. Place the scones on the prepared sheet, brush the tops with the reserved egg and cream, and bake for 12 to 15 minutes until well risen and golden.
  7. Cool on a wire rack for a few minutes and serve warm, split and spread with fruit jam.
