How to make it
- Preheat the oven to 220 C and fit one pie crust into a 9-inch pie dish, pressing it gently against the base and sides.
- Melt the butter in a saucepan over medium heat, add the chopped onion, and cook for 3 to 4 minutes until softened and translucent.
- Stir in the flour and cook for 1 minute, then gradually whisk in the broth and milk, stirring constantly until the sauce thickens to a smooth gravy.
- Add the diced cooked pork, mixed vegetables, thyme, pepper, and salt, and simmer for 5 minutes until heated through; ensure any reheated pork reaches at least 74 C.
- Pour the filling into the lined pie dish, top with the second crust, trim and crimp the edges to seal, and cut a few slits in the top to vent steam.
- Bake for 30 to 35 minutes until the crust is deep golden brown, covering the edges with foil if they brown too quickly.
- Let the pie rest for 10 minutes before slicing and serving so the filling can set.
