How to make it

  1. Preheat the oven to 220 C and fit one pie crust into a 9-inch pie dish, pressing it gently against the base and sides.
  2. Melt the butter in a saucepan over medium heat, add the chopped onion, and cook for 3 to 4 minutes until softened and translucent.
  3. Stir in the flour and cook for 1 minute, then gradually whisk in the broth and milk, stirring constantly until the sauce thickens to a smooth gravy.
  4. Add the diced cooked pork, mixed vegetables, thyme, pepper, and salt, and simmer for 5 minutes until heated through; ensure any reheated pork reaches at least 74 C.
  5. Pour the filling into the lined pie dish, top with the second crust, trim and crimp the edges to seal, and cut a few slits in the top to vent steam.
  6. Bake for 30 to 35 minutes until the crust is deep golden brown, covering the edges with foil if they brown too quickly.
  7. Let the pie rest for 10 minutes before slicing and serving so the filling can set.
