How to make it
- Make a brine by dissolving the salt and honey in the water with the cracked peppercorns, cider vinegar and thyme, then stir in the ice to cool it quickly; submerge the pork loin and refrigerate for 4 to 8 hours.
- Remove the pork from the brine, pat it completely dry and let it sit at room temperature for 30 minutes while you heat the oven to 220 C.
- Rub the loin all over with olive oil and a little extra cracked pepper, then sear it in a hot ovenproof pan on all sides until deeply browned, about 8 minutes total.
- Transfer the pan to the oven and roast, then lower the heat to 175 C and continue until the centre reaches an internal temperature of 63 C on a meat thermometer, roughly 45 to 60 minutes depending on thickness.
- Move the roast to a board, tent loosely with foil and rest for at least 10 minutes so the juices redistribute and the temperature carries over above 63 C for safe whole-muscle pork.
- Set the roasting pan over medium heat, sprinkle in the flour and whisk into the pan drippings for 1 minute, then gradually pour in the chicken stock, scraping up the browned bits, and simmer until the gravy thickens and coats a spoon.
- Slice the rested pork against the grain and serve with the strained warm gravy spooned over the top.
