How to make it

  1. Score the bottom of the tomatoes, blanch them in boiling water for 30 seconds, then peel, deseed, and chop them into a rough pulp, or grate them on a box grater for a smoother sauce.
  2. Warm the olive oil in a wide deep pan over medium heat and gently cook the finely diced onion with the bay leaf for about 8 minutes until soft and translucent but not browned, then stir in the chopped garlic for a further minute.
  3. Add the diced green and red peppers and cook for 10 minutes, stirring often, until they begin to soften and release their sweetness.
  4. Stir in the diced zucchini and cook for another 8 minutes so it softens but still holds its shape.
  5. Pour in the prepared tomato pulp, add the sugar, and season with salt and pepper, then lower the heat and simmer uncovered for 25 to 35 minutes, stirring occasionally, until the liquid has reduced and the mixture is thick and jammy.
  6. Discard the bay leaf, taste and adjust the seasoning, and rest the pisto for a few minutes before serving warm or at room temperature with crusty bread.
