How to make it

  1. Toss the sliced okra in a bowl with the hot sauce until every piece is evenly coated, then let it sit for 5 minutes so the coating clings.
  2. In a separate bowl, whisk together the flour, cornmeal, salt, black pepper, and cayenne until well combined.
  3. Pour the peanut oil into a deep heavy pot, filling it no more than halfway, and heat over medium-high until it reaches 190 C (375 F) on a thermometer.
  4. Working in batches, dredge the okra in the seasoned flour mixture, shaking off the excess, then carefully lower it into the hot oil so you do not crowd the pot or drop the temperature.
