How to make it

  1. Pour the chicken broth into a large saucepan and bring it to a gentle simmer over medium heat, tasting and adjusting the salt as needed.
  2. In a bowl, beat the eggs well, then whisk in the grated parmesan, semolina, chopped parsley, grated nutmeg and a few grinds of black pepper until evenly combined.
