Sweet Beef

How to make it
- Pat the beef chunks dry and season with the salt and pepper.
- Heat the bacon drippings in a heavy pot or Dutch oven over medium-high heat and brown the beef on all sides in batches, about 8 minutes total, then set aside.
- Lower the heat to medium, add the butter and chopped onion, and cook for 4 to 5 minutes until softened.
- Stir in the brown sugar, cider vinegar, and dry mustard until the sugar dissolves into a glossy sauce.
- Return the beef and any juices to the pot, pour in the water, and stir to combine.
- Bring to a gentle simmer, cover, and cook on low heat for 2 to 2.5 hours, stirring occasionally, until the beef is fork-tender.
- Uncover for the final 15 minutes to let the sauce reduce to a sweet-tangy glaze, then taste, adjust seasoning, and serve.
