How to make it

  1. Pat the beef chunks dry and season with the salt and pepper.
  2. Heat the bacon drippings in a heavy pot or Dutch oven over medium-high heat and brown the beef on all sides in batches, about 8 minutes total, then set aside.
  3. Lower the heat to medium, add the butter and chopped onion, and cook for 4 to 5 minutes until softened.
