How to make it

  1. Bring the chicken stock to a gentle boil in a large pot, then add the chicken breast and poach for about 12 minutes until cooked through to at least 74 C (165 F).
  2. Remove the chicken, let it cool slightly, then shred it finely and set aside.
  3. Add the sweet corn kernels, creamed corn, and diced carrot to the simmering stock and cook for 5 minutes until the carrot is tender.
  4. Return the shredded chicken to the pot and season with salt and white pepper.
  5. Mix the cornstarch with 4 tablespoons of cold water to make a smooth slurry, then stir it into the soup and simmer for 2 to 3 minutes until lightly thickened.
  6. Beat the egg in a small bowl, then slowly pour it into the soup in a thin stream while gently stirring to form delicate egg ribbons.
  7. Taste and adjust the seasoning, then ladle into bowls and garnish with sliced spring onions before serving.
