Sylheti Fried Rice

How to make it

  1. If your rice is freshly cooked, spread it on a tray and chill it so the grains firm up and separate; cold day-old rice gives the best texture and stops the fried rice turning sticky.
  2. Heat the vegetable oil in a large wok or frying pan over medium-high heat, then add the finely sliced onion and fry for 6 to 8 minutes until soft and lightly golden.
  3. Stir in the minced garlic, grated ginger and chopped green chillies and cook for about 1 minute until fragrant, then add the turmeric and cumin and toast the spices for 30 seconds.
  4. Push the mixture to one side, pour the beaten eggs into the cleared space and scramble them until just set, then break them up and mix into the onions.
  5. Add the peas and the cold rice, breaking up any clumps with the back of the spoon, and toss everything over high heat for 4 to 5 minutes until the rice is heated through and lightly toasted.
  6. Season with salt to taste and stir well so the spices coat every grain.
  7. Scatter over the chopped fresh coriander and serve hot.
