How to make it

  1. Peel and thinly slice the onions, and peel and finely grate the ginger, then combine them in a large mixing bowl.
  2. Add the salt and turmeric and rub everything together with your hands, then let the onions sit for about 10 minutes so they release some moisture.
  3. Lightly toast the panch puran in a dry pan over medium heat for 30 to 60 seconds until fragrant, then stir it into the onions.
  4. Add the rice flour and ground rice and mix to coat the onions, then pour in just enough of the boiling water, a little at a time, to bring everything together into a thick, sticky batter that holds its shape.
  5. Heat the oil in a deep, heavy pan to about 180C (350F); a small drop of batter should sizzle and rise to the surface straight away.
  6. Carefully lower in heaped spoonfuls of the mixture, a few at a time so the oil stays hot, and fry for 3 to 4 minutes, turning, until deep golden and crisp all over.
  7. Lift the fritters out with a slotted spoon and drain on paper towels, then serve hot with chutney or as a snack with tea.
