Sylheti Onion and Rice Fritters

How to make it
- Peel and thinly slice the onions, and peel and finely grate the ginger, then combine them in a large mixing bowl.
- Add the salt and turmeric and rub everything together with your hands, then let the onions sit for about 10 minutes so they release some moisture.
- Lightly toast the panch puran in a dry pan over medium heat for 30 to 60 seconds until fragrant, then stir it into the onions.
- Add the rice flour and ground rice and mix to coat the onions, then pour in just enough of the boiling water, a little at a time, to bring everything together into a thick, sticky batter that holds its shape.
- Heat the oil in a deep, heavy pan to about 180C (350F); a small drop of batter should sizzle and rise to the surface straight away.
- Carefully lower in heaped spoonfuls of the mixture, a few at a time so the oil stays hot, and fry for 3 to 4 minutes, turning, until deep golden and crisp all over.
- Lift the fritters out with a slotted spoon and drain on paper towels, then serve hot with chutney or as a snack with tea.
