How to make it
- Warm the olive oil in a small pan over low heat and gently cook the sliced onion for 12 to 15 minutes, stirring often, until soft and lightly caramelized, then set aside to cool.
- Toast the walnut halves in a dry pan over medium heat for 3 to 4 minutes until fragrant, watching closely so they do not burn, then tip onto a plate to cool.
- Wash and dry the lettuce, tear it into bite-sized pieces, and arrange in a wide salad bowl.
- Peel the orange, removing all the white pith, then slice it into rounds or cut into segments over a bowl to catch the juice.
- Whisk together the extra-virgin olive oil, balsamic vinegar, whole grain mustard and any reserved orange juice with a pinch of salt and pepper to make the dressing.
- Scatter the caramelized onion, orange pieces and toasted walnuts over the lettuce.
- Drizzle the dressing over the salad just before serving and toss gently to coat.
