Tofu Saltado

How to make it
- Press the tofu between paper towels for 15 minutes to remove excess moisture, then cut it into thick batons.
- Cook the french fries in the oven or fryer according to the package until golden and crisp, then keep them warm.
- Heat 2 tablespoons of the vegetable oil in a wok over high heat and sear the tofu on all sides until golden and crisp, about 6 minutes, then remove and set aside.
- Add the remaining oil and stir-fry the red onions and bell peppers over high heat for 2 to 3 minutes so they char slightly but stay crisp.
- Stir in the garlic, ground coriander, and crispy chilli in oil and cook for 1 minute until fragrant.
- Return the tofu to the wok, add the tomato wedges, then pour in the soy sauce and red wine vinegar and toss quickly so everything is coated and the tomatoes just begin to soften.
- Season with salt, fold in the chopped cilantro, and serve immediately over or alongside the hot fries.
