How to make it
- Heat the vegetable oil in a large saucepan over medium heat, add the chopped onion and cook gently for 6 to 8 minutes until soft and translucent.
- Stir in the garlic and bay leaves and cook for a further minute until fragrant, taking care not to let the garlic brown.
- Add the chopped tomatoes and tomato paste, stir well, and let them break down for about 5 minutes.
- Pour in the stock, add the sugar and a pinch of salt, then bring to a gentle boil before reducing the heat and simmering uncovered for 20 to 25 minutes until the tomatoes are completely soft.
- Remove and discard the bay leaves, then blend the soup until smooth using a stick blender, or in batches in a jug blender, taking care with the hot liquid.
- For an extra-smooth texture, pass the soup through a sieve back into the pan, then reheat gently and season to taste with salt and black pepper.
- Ladle into bowls and swirl a spoonful of cream into each before serving warm.
