How to make it

  1. Heat the vegetable oil in a large saucepan over medium heat, add the chopped onion and cook gently for 6 to 8 minutes until soft and translucent.
  2. Stir in the garlic and bay leaves and cook for a further minute until fragrant, taking care not to let the garlic brown.
  3. Add the chopped tomatoes and tomato paste, stir well, and let them break down for about 5 minutes.
  4. Pour in the stock, add the sugar and a pinch of salt, then bring to a gentle boil before reducing the heat and simmering uncovered for 20 to 25 minutes until the tomatoes are completely soft.
  5. Remove and discard the bay leaves, then blend the soup until smooth using a stick blender, or in batches in a jug blender, taking care with the hot liquid.
  6. For an extra-smooth texture, pass the soup through a sieve back into the pan, then reheat gently and season to taste with salt and black pepper.
  7. Ladle into bowls and swirl a spoonful of cream into each before serving warm.
