Turkey and Lima Beans

How to make it
- Soak the dried lima beans in plenty of cold water overnight, then drain and rinse them well before cooking.
- Place the soaked beans in a pot, cover generously with fresh water, bring to a boil, then simmer for 45 to 60 minutes until tender but not falling apart, and drain.
- Heat the olive oil in a large heavy pot over medium heat, add the chopped onions and celery, and cook for 6 to 8 minutes until soft and lightly golden.
- Add the ground turkey and cook, breaking it up with a spoon, until it loses all its pink colour and is cooked through, about 6 to 8 minutes.
- Stir in the chopped sage, ground coriander, cumin and chile flakes, and cook for 1 minute until fragrant.
- Add the cooked lima beans and the stock, season with salt and pepper, bring to a gentle simmer and cook uncovered for 20 to 25 minutes so the flavours meld and the liquid reduces to a stew-like consistency.
- Check that the turkey has reached a safe internal temperature of 74 C (165 F), then taste, adjust the seasoning, and serve hot.
