How to make it

  1. Peel and dice the potatoes and carrots into bite-sized chunks, slice the celery, chop the onions, mince the garlic, and core and roughly shred the cabbage.
  2. Heat the avocado oil in a large pot over medium heat and cook the onions, celery and garlic for about 5 minutes until soft and fragrant but not browned.
  3. Add the potatoes and carrots and stir for 2 to 3 minutes to coat them in the oil and aromatics.
  4. Pour in the chopped tomatoes and vegetable stock, stir in the Italian seasoning, and bring to a boil, then reduce to a simmer and cook covered for about 10 minutes.
  5. Stir in the shredded cabbage, cover again, and continue simmering for 12 to 15 minutes until the potatoes are fork-tender and the cabbage has wilted down and softened.
  6. Season the stew with salt and ground black pepper to taste, adding a splash more stock if you prefer it looser, and serve hot with crusty bread or over rice.
