How to make it
- Heat the oven to 175 C (350 F) and thoroughly grease and flour a bundt pan, paying attention to every groove so the cake releases cleanly.
- Peel, core and dice the apples, then toss them with the lemon zest and a tablespoon of the sugar and set aside.
- Whisk the flour, baking powder, salt, cinnamon, nutmeg and allspice together in a bowl.
- In a larger bowl beat the eggs with the remaining sugar until pale, then stream in the oil and vanilla while whisking to a smooth batter.
- Fold the dry ingredients into the wet just until no streaks remain, then gently stir in the diced apples and any juices.
- Spoon the batter into the prepared pan, smooth the top, and bake for 50 to 60 minutes until a skewer inserted into the center comes out clean.
- Cool the cake in the pan for 15 minutes, then invert onto a rack to cool completely before slicing.
