Bacon-Wrapped Scallops

How to make it
- Pat the scallops thoroughly dry with paper towels, remove the small side muscle if still attached, and season lightly with salt and pepper.
- For the teriyaki glaze, simmer the soy sauce, brown sugar, mirin, minced garlic and grated ginger in a small pan for 3 to 4 minutes until slightly syrupy, then set aside.
- Cut each bacon slice in half, lay the pieces on a plate, and microwave or briefly pan-fry them for 1 to 2 minutes so the fat starts to render but the bacon stays pliable.
- Wrap a half-slice of bacon around each scallop and secure it with a toothpick.
- Heat the oil in a skillet over medium-high heat and sear the wrapped scallops for about 2 to 3 minutes per side, turning to crisp the bacon on all sides.
- Brush the scallops generously with the teriyaki glaze in the last minute of cooking, cooking until the scallops are opaque throughout and firm and reach an internal temperature of 63C (145F) at the center.
- Remove the toothpicks, drizzle with any remaining glaze, and serve immediately while hot.
