Baked Eggplant

How to make it

  1. Preheat the oven to 200 C and lightly oil a baking dish.
  2. Halve the eggplants lengthwise, score the flesh in a crosshatch pattern, brush with 2 tablespoons of the olive oil, season with salt, and roast cut-side up for 25 minutes until softened.
  3. While the eggplant roasts, heat the remaining olive oil in a pan and gently cook the chopped onion for 5 minutes until soft and translucent.
  4. Add the minced garlic and sliced mushrooms and cook for a further 5 to 6 minutes until the mushrooms release their liquid and it evaporates.
  5. Stir in the chopped tomatoes, cinnamon, oregano, salt and pepper, then simmer for 8 to 10 minutes until the sauce thickens.
  6. Scoop a little flesh from the centre of the roasted eggplant halves, chop it and fold it back into the sauce, then spoon the mixture generously over the halves.
  7. Return the filled eggplants to the oven and bake for a further 15 to 20 minutes until bubbling and tender.
  8. Scatter with fresh parsley and serve warm.
