How to make it
- Heat 1 tablespoon of the vegetable oil in a skillet over medium-high heat, add the chopped mushrooms and cook for 6 to 8 minutes until they release their moisture and it evaporates, then stir in the garlic and cook 1 minute more and let cool.
- In a bowl, combine the ground beef with the cooled mushroom mixture, chopped parsley, cream, chilli sauce, salt and pepper, mixing gently with your hands just until combined to keep the patties tender.
- Divide the mixture into 4 equal portions and shape each into a patty slightly wider than the buns, pressing a shallow dimple into the centre of each to prevent doming.
- Heat the remaining tablespoon of oil in a large skillet or grill pan over medium-high heat until shimmering.
- Cook the patties for about 4 minutes per side, turning once, until well browned and cooked through to a safe internal temperature of 71 C (160 F).
- Transfer the patties to a plate and let them rest for 2 to 3 minutes while you lightly toast the cut sides of the buns in the same pan.
- Assemble each burger on a toasted bun with your choice of toppings and serve immediately.
