How to make it

  1. Heat 1 tablespoon of the vegetable oil in a skillet over medium-high heat, add the chopped mushrooms and cook for 6 to 8 minutes until they release their moisture and it evaporates, then stir in the garlic and cook 1 minute more and let cool.
  2. In a bowl, combine the ground beef with the cooled mushroom mixture, chopped parsley, cream, chilli sauce, salt and pepper, mixing gently with your hands just until combined to keep the patties tender.
  3. Divide the mixture into 4 equal portions and shape each into a patty slightly wider than the buns, pressing a shallow dimple into the centre of each to prevent doming.
  4. Heat the remaining tablespoon of oil in a large skillet or grill pan over medium-high heat until shimmering.
  5. Cook the patties for about 4 minutes per side, turning once, until well browned and cooked through to a safe internal temperature of 71 C (160 F).
  6. Transfer the patties to a plate and let them rest for 2 to 3 minutes while you lightly toast the cut sides of the buns in the same pan.
  7. Assemble each burger on a toasted bun with your choice of toppings and serve immediately.
