How to make it

  1. Stir together the mayonnaise, chipotle purée and cayenne in a small bowl until smooth, then cover and chill while you cook the burgers so the flavours meld.
  2. Gently break up the ground chuck in a bowl and divide it into 4 equal portions, shaping each into a loose patty slightly wider than the buns and pressing a shallow dimple into the centre so it cooks flat.
  3. Season both sides of each patty generously with the salt and black pepper just before cooking, handling the meat as little as possible to keep it tender.
  4. Heat the oil in a heavy skillet or grill pan over medium-high heat until shimmering, then lay in the patties and cook undisturbed for about 3 to 4 minutes until a deep brown crust forms.
  5. Flip the patties once and cook a further 3 to 4 minutes, laying a slice of cheddar on each for the final minute to melt; cook to an internal temperature of at least 71°C (160°F) for safely cooked ground beef.
  6. While the burgers rest, lightly toast the cut sides of the buns in the same pan until golden.
  7. Spread chipotle mayo on both bun halves, set a patty on each base, add lettuce and tomato to taste, crown with the top bun and serve at once.
