How to make it

  1. Preheat the oven to 180 C (350 F) and use the unsalted butter to grease a 23 cm square baking dish.
  2. Brown the sausage links in a skillet over medium heat for 6 to 8 minutes until fully cooked through to at least 71 C (160 F), then drain and slice into bite-sized pieces.
  3. Scatter the crumbled cornbread evenly over the base of the dish and top with the sliced sausage and the shredded monterey jack cheese.
  4. In a large bowl whisk the eggs with the milk, salt and black pepper until well combined, then stir in dollops of the ricotta cheese.
  5. Pour the egg mixture evenly over the cornbread and sausage, pressing down lightly so everything is moistened.
  6. Bake uncovered for 35 to 40 minutes until the centre is set and no longer jiggly and a knife inserted into the middle comes out clean and the top is golden.
  7. Let the casserole rest for 5 minutes before cutting into squares and serving warm.
