Breakfast Casserole

How to make it
- Preheat the oven to 180 C (350 F) and use the unsalted butter to grease a 23 cm square baking dish.
- Brown the sausage links in a skillet over medium heat for 6 to 8 minutes until fully cooked through to at least 71 C (160 F), then drain and slice into bite-sized pieces.
- Scatter the crumbled cornbread evenly over the base of the dish and top with the sliced sausage and the shredded monterey jack cheese.
- In a large bowl whisk the eggs with the milk, salt and black pepper until well combined, then stir in dollops of the ricotta cheese.
- Pour the egg mixture evenly over the cornbread and sausage, pressing down lightly so everything is moistened.
- Bake uncovered for 35 to 40 minutes until the centre is set and no longer jiggly and a knife inserted into the middle comes out clean and the top is golden.
- Let the casserole rest for 5 minutes before cutting into squares and serving warm.
