How to make it

  1. Soak the dried red chillies in hot water for 10 minutes, then drain and blend them with the onion, garlic, ginger, galangal, the tender base of one lemongrass stalk, shrimp paste, and turmeric into a smooth paste, adding a splash of water if needed.
  2. Heat the vegetable oil in a heavy pot over medium heat and fry the spice paste, stirring constantly, for 8 to 10 minutes until it darkens and the oil separates and smells fragrant.
  3. Stir in the paprika, then add the pork chunks and turn them to coat thoroughly in the paste, searing for about 5 minutes.
  4. Pour in the water, add the bruised remaining lemongrass stalk, the brown sugar, and the fish sauce, and bring to a boil.
  5. Reduce the heat to low, cover, and simmer gently for about 1 hour, stirring occasionally, until the pork is fork-tender and reaches at least 71 C (160 F).
  6. Uncover and simmer for a final 10 to 15 minutes to reduce the sauce to a thick, oily gravy that clings to the meat.
  7. Taste and adjust with salt or a little more sugar, remove the lemongrass stalk, and serve hot with steamed rice.
