How to make it

  1. Build a campfire and let it burn down to a steady bed of glowing coals, or preheat a grill to medium-high, around 200C.
  2. Rinse the trout and pat them dry inside and out, then season the cavities well with salt and pepper.
  3. Tuck a knob of butter, a couple of lemon slices and a few sprigs of parsley or dill into each cavity.
  4. Wrap two rashers of bacon in a spiral around each trout to hold the cavity closed and to baste the fish as it cooks.
  5. Lay each fish on a large sheet of buttered foil, fold and crimp the edges tightly to make a sealed parcel.
  6. Set the parcels on the coals or grill and cook for about 8 minutes per side, turning once, until the flesh is opaque and flakes easily and reaches at least 63C at the thickest point.
  7. Carefully open the parcels away from your face to let the steam escape, then serve the trout with the bacon, extra lemon wedges and the buttery juices spooned over.
