How to make it
- Warm the olive oil in a large heavy pot over medium heat, then add the diced onion and a pinch of salt and cook for about 6 minutes until softened and translucent.
- Stir in the minced garlic, diced green bell pepper and finely chopped jalapenos and cook for another 4 minutes until fragrant and beginning to soften.
- Add the tomato paste, cumin, chili powder and smoked paprika and stir constantly for 1 to 2 minutes to toast the spices and deepen their flavour.
- Tip in the chopped tomatoes and the vegetable stock, scrape up anything stuck to the bottom, and bring the mixture to a gentle simmer.
- Drain and rinse all three beans, then add them along with the corn kernels and stir to combine.
- Simmer uncovered over low heat for 25 to 30 minutes, stirring now and then, until the chili has thickened and the flavours have melded; mash a few beans against the side of the pot if you want a thicker texture.
- Taste and adjust with salt and extra chili powder, then let it rest off the heat for 5 minutes before serving.
