How to make it

  1. Warm the olive oil in a large heavy pot over medium heat, then add the diced onion and a pinch of salt and cook for about 6 minutes until softened and translucent.
  2. Stir in the minced garlic, diced green bell pepper and finely chopped jalapenos and cook for another 4 minutes until fragrant and beginning to soften.
  3. Add the tomato paste, cumin, chili powder and smoked paprika and stir constantly for 1 to 2 minutes to toast the spices and deepen their flavour.
  4. Tip in the chopped tomatoes and the vegetable stock, scrape up anything stuck to the bottom, and bring the mixture to a gentle simmer.
  5. Drain and rinse all three beans, then add them along with the corn kernels and stir to combine.
  6. Simmer uncovered over low heat for 25 to 30 minutes, stirring now and then, until the chili has thickened and the flavours have melded; mash a few beans against the side of the pot if you want a thicker texture.
  7. Taste and adjust with salt and extra chili powder, then let it rest off the heat for 5 minutes before serving.
