Crispy Roast Potatoes

How to make it
- Preheat the oven to 220 C (425 F) and place a large rimmed baking sheet inside to heat up while you prepare the potatoes.
- Peel the potatoes and cut them into chunks roughly 4 cm across so they cook evenly, then put them in a large pot and cover with cold salted water.
- Bring to a boil and parboil for 8 to 10 minutes until the outsides are just tender when pierced, then drain well in a colander and leave to steam-dry for 2 minutes.
- Return the potatoes to the empty pot, sprinkle over the flour, italian seasoning, garlic powder, a good pinch of salt and plenty of black pepper, then put on the lid and shake firmly to rough up the edges into a fluffy coating.
- Carefully remove the hot baking sheet, pour in the olive oil and tip in the potatoes, turning them to coat in the hot oil and spreading them out in a single layer with space between each piece.
- Roast for 40 to 50 minutes, turning once or twice, until deeply golden and crisp all over.
- Season with a little more salt and serve immediately while hot and crunchy.
