How to make it

  1. Preheat the oven to 220 C (425 F) and place a large rimmed baking sheet inside to heat up while you prepare the potatoes.
  2. Peel the potatoes and cut them into chunks roughly 4 cm across so they cook evenly, then put them in a large pot and cover with cold salted water.
  3. Bring to a boil and parboil for 8 to 10 minutes until the outsides are just tender when pierced, then drain well in a colander and leave to steam-dry for 2 minutes.
  4. Return the potatoes to the empty pot, sprinkle over the flour, italian seasoning, garlic powder, a good pinch of salt and plenty of black pepper, then put on the lid and shake firmly to rough up the edges into a fluffy coating.
  5. Carefully remove the hot baking sheet, pour in the olive oil and tip in the potatoes, turning them to coat in the hot oil and spreading them out in a single layer with space between each piece.
  6. Roast for 40 to 50 minutes, turning once or twice, until deeply golden and crisp all over.
  7. Season with a little more salt and serve immediately while hot and crunchy.
