Indonesian-style Fried Rice

How to make it
- Pound or blend the garlic and red chillies into a rough paste, and slice the spring onions, keeping the green tops for garnish.
- Heat 1 tablespoon of the oil in a wok over high heat, beat the eggs lightly, scramble them until just set, then remove and set aside.
- Add the remaining oil to the wok, fry the chilli-garlic paste for about 30 seconds until fragrant, then add the prawns or diced chicken.
- Stir-fry until the prawns turn pink and opaque or the chicken is cooked through with no pink remaining, reaching at least 75 C internally.
- Add the cold cooked rice and toss over high heat, breaking up any clumps, then stir in the peas, beansprouts and the white parts of the spring onion.
- Drizzle in the sweet soy sauce and soy sauce, season with salt and pepper, and keep tossing until the rice is evenly coloured and piping hot throughout.
- Fold the scrambled egg back in, garnish with the reserved spring onion greens, and serve immediately while hot.
