How to make it

  1. Pound or blend the garlic and red chillies into a rough paste, and slice the spring onions, keeping the green tops for garnish.
  2. Heat 1 tablespoon of the oil in a wok over high heat, beat the eggs lightly, scramble them until just set, then remove and set aside.
  3. Add the remaining oil to the wok, fry the chilli-garlic paste for about 30 seconds until fragrant, then add the prawns or diced chicken.
  4. Stir-fry until the prawns turn pink and opaque or the chicken is cooked through with no pink remaining, reaching at least 75 C internally.
  5. Add the cold cooked rice and toss over high heat, breaking up any clumps, then stir in the peas, beansprouts and the white parts of the spring onion.
  6. Drizzle in the sweet soy sauce and soy sauce, season with salt and pepper, and keep tossing until the rice is evenly coloured and piping hot throughout.
  7. Fold the scrambled egg back in, garnish with the reserved spring onion greens, and serve immediately while hot.
