How to make it
- Peel the potatoes, cut them into even chunks, and place them in a pot of cold salted water, then bring to the boil and simmer for 15 to 20 minutes until tender to a knife.
- While the potatoes cook, cut the beef into small bite-sized pieces and pat them dry, then heat the vegetable oil in a wide pan over medium-high heat.
- Brown the beef in batches so the pan stays hot, then add the chopped onion and cook for 4 minutes until softened.
- Stir in the sliced mushrooms, ginger powder, thyme, crumbled stock cubes and black pepper, add a splash of water, then cover and simmer for 25 to 30 minutes until the beef is fully cooked through and tender.
- Drain the potatoes well and return them to the warm pot, add the butter and warmed milk, then mash until smooth and creamy and season with salt to taste.
- Taste the spiced beef and adjust the seasoning, letting any excess liquid reduce to a glossy sauce.
- Spoon the mashed potatoes onto plates and top generously with the spiced beef and mushrooms, serving hot.
