How to make it

  1. Peel the potatoes, cut them into even chunks, and place them in a pot of cold salted water, then bring to the boil and simmer for 15 to 20 minutes until tender to a knife.
  2. While the potatoes cook, cut the beef into small bite-sized pieces and pat them dry, then heat the vegetable oil in a wide pan over medium-high heat.
  3. Brown the beef in batches so the pan stays hot, then add the chopped onion and cook for 4 minutes until softened.
  4. Stir in the sliced mushrooms, ginger powder, thyme, crumbled stock cubes and black pepper, add a splash of water, then cover and simmer for 25 to 30 minutes until the beef is fully cooked through and tender.
  5. Drain the potatoes well and return them to the warm pot, add the butter and warmed milk, then mash until smooth and creamy and season with salt to taste.
  6. Taste the spiced beef and adjust the seasoning, letting any excess liquid reduce to a glossy sauce.
  7. Spoon the mashed potatoes onto plates and top generously with the spiced beef and mushrooms, serving hot.
